LONG CUT NOODLE
Rigatoni is a form of tube-shaped pasta of approx. 1.25" long and just over 1/2" in diameter. It is larger than penne and ziti and sometimes slightly curved. Rigatoni is usually ridged, and the tube's end is square-cut like ziti, not diagonal like penne.The word rigatoni, comes from the Italian word rigato, which means "ridged" and is associated with the cuisine of southern and central Italy. Best with substantial meaty sauces.
Great for hot and cold entrees, and side dishes
4-6 qts of water per 1 lb. pasta. Bring to rolling boil and add pasta. Sitr vigorously 15 seconds. Cook to recommended cook time. Drain pasta into prepared ice bath. Rinse with cold water and shake dry. Add vegetable oil to coat. Pasta can be stored up to 24 hours under refrigerated conditions.
