LONG CUT NOODLE
Vermicelli is similar to Spaghetti. It is a 10" long, thin, cylindrical pasta that is slightly thinner in diameter.(.05" versus .07") Traditionally, Vermicelli was 20 inches long, but shorter lengths are more common these days. A variety of pasta dishes are based on it, from Carbonara or garlic and oil to a tomato sauce, meat and other sauces. In Italy, Vermicelli is primarily broken into small lengths and used in soups.
Great for hot and cold entrees, and side dishes
4-6 qts of water per 1 lb. pasta. Bring to rolling boil and add pasta. Sitr vigorously 15 seconds. Cook to recommended cook time. Drain pasta into prepared ice bath. Rinse with cold water and shake dry. Add vegetable oil to coat. Pasta can be stored up to 24 hours under refrigerated conditions.
