LONG CUT NOODLE
Linguine is like fettuccine, 10 inches long, but elliptical in section rather than flat. It is wider than spaghetti, about 4 mm, but not as wide as fettuccine. The name linguine means "little tongues" in Italian. Linguine originated in Genoa and the Liguria region of Italy. Linguine alle vongole (linguine with clams) and Linguine al pesto are popular uses of this pasta. While spaghetti traditionally accompanies meat and tomato dishes, linguine are often served with seafood or pesto.
Great for hot and cold entrees, and side dishes
4-6 qts of water per 1 lb. pasta. Bring to rolling boil and add pasta. Sitr vigorously 15 seconds. Cook to recommended cook time. Drain pasta into prepared ice bath. Rinse with cold water and shake dry. Add vegetable oil to coat. Pasta can be stored up to 24 hours under refrigerated conditions.
